Method
- Dice the chicken breast, eliminating the part of cartilage that is in the middle of it.
- Peel the onions and garlic. Cut the onions, and crush the garlic.
- Peel and dice zucchini and carrots.
- Dice the tomatoes.
- Prepare the vegetable broth.
- Take a pan, and pour a little extra virgin olive oil. Heat the oil, and add the onions and garlic. Make them brown lightly, then add a little broth. Leave on the heat for about 10 minutes, then add the chicken.
- Let the chicken cook for about 10 minutes, then add 2 teaspoons of curry.
- Add zucchini, carrots and tomatoes. Pour the broth to cover the ingredients.
