SALMON PASTA WITH CREAM

Salmon pasta with cream is a tasty and simple dish to prepare. It can be prepared using both fresh salmon and smoked salmon. Here we’ll see how to prepare salmon pasta with cream using fresh wild salmon (which is not always found; you can, however, use fresh farmed salmon. The procedure does not change!).
The preparation time of the ingredients is about 10 minutes, and cooking takes about 20 minutes.
A dish of salmon pasta with cream provides about 620 kcal. The macronutrients are divided as follows: protein 34 g, lipids 26 g, carbohydrates 59 g. The fatty acids contained are mainly monounsaturated (approximately 10 g), then saturated (4 g) and finally polyunsaturated (4 g).
For the salmon pasta with cream we recommend using short pasta shapes, such as penne or farfalle, or long and flat shapes, such as tagliatelle or tagliolini.

  • 320 g durum wheat pasta
  • 280 g fresh wild salmon fillets
  • 120 ml cream
  • 1 lemon

Preparation of salmon pasta with cream

  1. Cut the fresh salmon into pieces.
  2. Squeeze the lemon and grate some lemon zest.
  3. Put a pot of water on the stove to cook pasta.
  4. When the water boils, add a little coarse salt and toss the pasta.
  5. While the pasta is cooking, take a pan and pour a little extra virgin olive oil.
  6. Put the salmon, lemon juice and grated rind in the pan.
  7. Let the lemon juice evaporate; then and cream, salt and pepper.
  8. Cook the ingredients in the pan for about 5 minutes over medium heat.
  9. Drain the pasta al dente, and transfer it to the pan.
  10. Sauté the ingredients together in the pan for a minute.

Some tips or additional information

  • Fresh salmon, especially if wild, is a good source of nutrients. Both wild and farmed salmon are good sources of unsaturated fats. However, wild salmon contains less fat and the ratio between unsaturated and saturated fatty acids is higher. 100 g of raw wild salmon contain approximately 6 g of lipids, 1 g of saturated fatty acids, 2 g of monounsaturated and 2.5 g of polyunsaturated fats. 100 g of farmed salmon contain about 13 g of lipids, 3 g of saturated fatty acids, 3.7 of monounsaturated and 3.9 of polyunsaturated.
  • Fresh cream (the one that can be whipped, without sugar) gives the dish a more delicate flavor and a more creamy consistency than cooking cream.
  • If you want to decorate the dish of pasta with cream and salmon and give a touch of particular flavour, you can use for example a little dill or chives.
  • You can add another aromatic touch by pouring a little vodka on the salmon while cooking it.

PASTA WITH SALMON WITHOUT CREAM

Pasta with salmon without cream is a light and simple dish to prepare.
The preparation time is about 10 minutes, and cooking takes about 20 minutes.

  1. Cut the salmon fillet into pieces.
  2. Bring a pot of water to the boil, add a little salt and toss the pasta.
  3. While the pasta is cooking, put a little oil in a pan and heat it.
  4. Now, put the salmon in the pan, add a little salt and blend with the white wine.
  5. Cook the salmon over a low or moderate heat for about 5 minutes.
  6. Set aside a tablespoon of cooking water, and drain the pasta al dente.
  7. Add black pepper, a drizzle of oil and possibly a little cooking water, and sauté the ingredients or mix with a wooden spoon for one or two minutes.

Some tips or additional information

  • If you want to give a little more flavour to the pasta with salmon, you can add some Parmigiano Reggiano cheese while you are about to finish mixing the ingredients in the pan.
  • Drain the pasta al dente, or even a moment before, as it will continue cooking in the pan.
  • At the end of the procedure, you can add a little bit of parsley, chives or dill.
  • Some people add to the recipe some cherry tomatoes.

PASTA WITH SALMON AND ZUCCHINI

Pasta with salmon and zucchini is an easy tasty and complete recipe. Courgettes give the dish lightness, and make it more complete from a nutritional point of view.
The preparation time of the ingredients is about 15 minutes, and the cooking time is about 35 minutes. The total time is therefore 35 minutes.
One serving of salmon and zucchini pasta prepared with wild salmon contains approximately 34 g of protein, 23 g of lipids and 59 g of carbohydrates, and provides about 600 kcal. If you use farmed salmon, the calories are a little more, but the difference is not very relevant.

How to prepare pasta with salmon and zucchini

  1. Wash the courgettes, remove the ends and cut them into slices.
  2. Cut the salmon fillet into pieces.
  3. Take a pan, pour a couple of tablespoons of extra virgin olive oil and add the zucchini. Add a couple of tablespoons of water and a pinch of salt.
  4. While the courgettes are cooking, bring a pot of water to the boil. When water boils, add a little coarse salt and toss the pasta.
  5. When about 5 minutes are left before the zucchini are cooked, add the salmon.

  • If you wish to make the seasoning creamier, take half of the zucchini before putting the salmon pieces in the pan. Blend the zucchini, the put the pureed zucchini in the pan and sauté them together with all the other ingredients.
  • To give more flavour and creaminess to the pasta with salmon and courgetti, almost at the end of the preparation you can add some grated Parmigiano Reggiano in the pan and mix it with the other ingredients.

SMOKED SALMON PASTA

Many salmon pasta recipes can also be prepared using smoked salmon.
Smoked salmon gives recipes a more intense flavour, also due to the high presence of sodium.

  • 320 g durum wheat pasta
  • 200 g smoked salmon
  • 40 g butter
  • 1 lemon
  • Pepper to taste

Method

To prepare pasta with smoked salmon and lemon, follow these simple steps:

  1. Bring a pot of water to the boil; add a little salt and toss the pasta.
  2. While the pasta is cooking, cut the smoked salmon into small pieces, squeeze the lemon and grate a part of the rind.
  3. Take a pan, and melt the butter.
  4. Add the salmon, the lemon juice and the grated rind. Stir and cook for 2 or 3 minutes. Then remove the pan from the fire.
  5. Drain the pasta and transfer it to the pan.
  6. Put the pan back on the heat, and sauté the ingredients together for about 1 minute, so that they blend together.

Some tips or further information

Smoked salmon should be cooked just for a minimal time. Cooking it for a long time makes it too salty.
Also due to the amount of salt contained in the smoked salmon, it is advisable to avoid adding salt during the preparation of the recipe.
